- Firm tofu - 150 grams, crumbled

- Spinach - 50 grams, chopped
- Green onion - 2, finely sliced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, minced
- Salt - to taste
- Black pepper - to taste
- Panko breadcrumbs - 2 tablespoons
- Sesame seeds - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Slice the eggplant lengthwise into 1 cm thick slices. Sprinkle salt on both sides and let it sit for 15 minutes to draw out moisture.
- In a bowl, combine the crumbled tofu, grated carrot, chopped spinach, green onion, soy sauce, sesame oil, minced garlic, minced ginger, salt, and black pepper. Mix well to form the filling.
- Rinse the eggplant slices under cold water to remove excess salt, then pat them dry with a paper towel.
- Take one slice of eggplant, place a spoonful of the tofu mixture on one end, and roll it up tightly. Secure the roll with a toothpick if needed. Repeat with the remaining slices.
- Arrange the rolled eggplant on a baking tray lined with parchment paper. Sprinkle the tops with panko breadcrumbs.
- Bake in the preheated oven for 25-30 minutes or until the eggplant is tender and the tops are golden brown.
- Remove from the oven, let cool slightly, and garnish with sesame seeds before serving.
