Ingredients

  • Eggplant - 1 medium
  • Firm tofu - 150 grams, crumbled
  • Carrot - 1 small, finely grated
  • Spinach - 50 grams, chopped
  • Green onion - 2, finely sliced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, minced
  • Salt - to taste
  • Black pepper - to taste
  • Panko breadcrumbs - 2 tablespoons
  • Sesame seeds - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the eggplant lengthwise into 1 cm thick slices. Sprinkle salt on both sides and let it sit for 15 minutes to draw out moisture.
  3. In a bowl, combine the crumbled tofu, grated carrot, chopped spinach, green onion, soy sauce, sesame oil, minced garlic, minced ginger, salt, and black pepper. Mix well to form the filling.
  4. Rinse the eggplant slices under cold water to remove excess salt, then pat them dry with a paper towel.
  5. Take one slice of eggplant, place a spoonful of the tofu mixture on one end, and roll it up tightly. Secure the roll with a toothpick if needed. Repeat with the remaining slices.
  6. Arrange the rolled eggplant on a baking tray lined with parchment paper. Sprinkle the tops with panko breadcrumbs.
  7. Bake in the preheated oven for 25-30 minutes or until the eggplant is tender and the tops are golden brown.
  8. Remove from the oven, let cool slightly, and garnish with sesame seeds before serving.
