Ingredients

  • Sweet rice flour (mochi flour) - 100 grams
  • Water - 120 ml
  • Sugar - 30 grams
  • Baking powder - 1 teaspoon
  • Red bean paste (anko) - 80 grams
  • Cornstarch - for dusting
  • Vanilla extract - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the sweet rice flour, baking powder, sugar, and a pinch of salt.
  3. Gradually add the water and vanilla extract, mixing until you achieve a smooth batter.
  4. Lightly grease a baking dish with oil and pour half of the batter into the dish, spreading it evenly.
  5. Spoon dollops of red bean paste over the batter, then pour the remaining batter on top to cover the filling.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is lightly golden and a toothpick comes out clean.
  7. Remove from the oven and let it cool slightly before dusting with cornstarch to prevent sticking.
  8. Cut into squares and serve warm or at room temperature.
