Ingredients
- Sweet rice flour (mochi flour) - 100 grams
- Water - 120 ml
- Sugar - 30 grams
- Baking powder - 1 teaspoon
- Red bean paste (anko) - 80 grams
- Cornstarch - for dusting
- Vanilla extract - 1/2 teaspoon
- Salt - a pinch
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the sweet rice flour, baking powder, sugar, and a pinch of salt.
- Gradually add the water and vanilla extract, mixing until you achieve a smooth batter.
- Lightly grease a baking dish with oil and pour half of the batter into the dish, spreading it evenly.
- Spoon dollops of red bean paste over the batter, then pour the remaining batter on top to cover the filling.
- Bake in the preheated oven for 25-30 minutes, or until the top is lightly golden and a toothpick comes out clean.
- Remove from the oven and let it cool slightly before dusting with cornstarch to prevent sticking.
- Cut into squares and serve warm or at room temperature.
