Ingredients

  • Udon noodles - 200 grams
  • Chicken breast, diced - 150 grams
  • Onion, finely chopped - 1 medium (150 grams)
  • Carrot, diced - 1 medium (100 grams)
  • Green bell pepper, diced - 1 medium (100 grams)
  • Curry powder - 2 tablespoons
  • Coconut milk - 200 ml
  • Soy sauce - 1 tablespoon
  • Cheddar cheese, grated - 100 grams
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Chopped green onions - for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cook the udon noodles according to package instructions, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat and sauté the chopped onion for about 3-4 minutes until translucent.
  4. Add the diced chicken breast to the skillet and cook until browned, about 5-7 minutes.
  5. Stir in the diced carrot and green bell pepper, cooking for an additional 3-4 minutes.
  6. Add the curry powder and cook for 1 minute until fragrant.
  7. Pour in the coconut milk and soy sauce, stirring to combine, then let it simmer for about 5 minutes until slightly thickened. Season with salt and black pepper to taste.
  8. In a large mixing bowl, combine the cooked udon noodles with the curry mixture, ensuring the noodles are well coated.
  9. Transfer the mixture to a baking dish and spread it evenly. Sprinkle the grated cheddar cheese on top.
  10. Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden brown.
  11. Remove from the oven and let it cool for a few minutes before garnishing with chopped green onions. Serve warm.
