Steps
- Preheat your oven to 180°C (350°F).
- Cook the udon noodles according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat and sauté the chopped onion for about 3-4 minutes until translucent.
- Add the diced chicken breast to the skillet and cook until browned, about 5-7 minutes.
- Stir in the diced carrot and green bell pepper, cooking for an additional 3-4 minutes.
- Add the curry powder and cook for 1 minute until fragrant.
- Pour in the coconut milk and soy sauce, stirring to combine, then let it simmer for about 5 minutes until slightly thickened. Season with salt and black pepper to taste.
- In a large mixing bowl, combine the cooked udon noodles with the curry mixture, ensuring the noodles are well coated.
- Transfer the mixture to a baking dish and spread it evenly. Sprinkle the grated cheddar cheese on top.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for a few minutes before garnishing with chopped green onions. Serve warm.
