Ingredients

  • Pork belly - 500 grams
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Sake - 30 ml
  • Brown sugar - 20 grams
  • Garlic - 3 cloves, minced
  • Ginger - 10 grams, sliced
  • Green onions - 2 stalks, chopped
  • Sesame oil - 10 ml
  • Black pepper - to taste

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a bowl, mix soy sauce, mirin, sake, brown sugar, minced garlic, sliced ginger, and sesame oil to create the marinade.
  3. Place the pork belly in a shallow dish and pour the marinade over it, ensuring it is well coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
  4. Transfer the marinated pork belly to a baking dish, reserving the marinade.
  5. Bake in the preheated oven for 1 hour, basting with the reserved marinade every 20 minutes.
  6. After 1 hour, increase the oven temperature to 200°C (390°F) and bake for an additional 20 minutes to crisp the exterior.
  7. Remove from oven and let it rest for 10 minutes before slicing.
  8. Serve the sliced chashu with chopped green onions on top.
