Ingredients
- Pork belly - 500 grams
- Soy sauce - 60 ml
- Mirin - 30 ml
- Sake - 30 ml
- Brown sugar - 20 grams
- Garlic - 3 cloves, minced
- Ginger - 10 grams, sliced
- Green onions - 2 stalks, chopped
- Sesame oil - 10 ml
- Black pepper - to taste
Steps
- Preheat the oven to 160°C (320°F).
- In a bowl, mix soy sauce, mirin, sake, brown sugar, minced garlic, sliced ginger, and sesame oil to create the marinade.
- Place the pork belly in a shallow dish and pour the marinade over it, ensuring it is well coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
- Transfer the marinated pork belly to a baking dish, reserving the marinade.
- Bake in the preheated oven for 1 hour, basting with the reserved marinade every 20 minutes.
- After 1 hour, increase the oven temperature to 200°C (390°F) and bake for an additional 20 minutes to crisp the exterior.
- Remove from oven and let it rest for 10 minutes before slicing.
- Serve the sliced chashu with chopped green onions on top.
