Ingredients

  • Ayu fish - 2 whole (about 200g each)
  • Sea salt - 1 teaspoon
  • Lemon - 1, for serving
  • Fresh parsley - 2 tablespoons, for garnish

Steps

  1. Clean the Ayu fish under cold water, removing any entrails and scales, then pat dry with paper towels.
  2. Sprinkle sea salt evenly inside and outside the fish, letting it sit for 10 minutes to absorb the flavor.
  3. Preheat a grill or grill pan over medium heat.
  4. Once hot, place the Ayu fish on the grill and cook for about 5-7 minutes on each side, or until the skin is crispy and the flesh is opaque.
  5. Remove the fish from the grill and let it rest for a couple of minutes.
  6. Serve the grilled Ayu with lemon wedges and garnish with fresh parsley.
