Steps
- In a pot, bring the dashi stock to a gentle simmer over medium heat.
- Add the minced garlic and grated ginger to the pot, cooking for 1-2 minutes until fragrant.
- Add the asari clams to the pot and cover, allowing them to steam for about 5 minutes until they open.
- Once the clams are opened, remove them from the pot and set aside, discarding any that remain closed.
- In a small bowl, mix the miso paste with a ladleful of the hot broth until smooth, then stir this mixture back into the pot.
- Add the diced tofu and rehydrated seaweed to the pot, cooking gently for another 2-3 minutes.
- Return the clams to the pot and add soy sauce and sesame oil, stirring gently to combine.
- Remove from heat, garnish with chopped green onions, and serve hot.
