  • Ginger - 1 teaspoon, grated
  • Green onions - 2 stalks, chopped
  • Shiitake mushrooms - 100 grams, sliced
  • Seaweed (Wakame) - 5 grams, dried
  • Salt - to taste

Steps

  1. Soak the asari clams in water for about 20 minutes to allow them to expel any sand.
  2. In a pot, combine the dashi stock, soy sauce, mirin, garlic, and ginger; bring to a gentle simmer.
  3. Add the soaked clams to the pot and cover; cook until the clams open, about 5-7 minutes.
  4. Remove any clams that do not open and discard them.
  5. Add the sliced shiitake mushrooms and dried wakame to the pot; simmer for another 3-5 minutes.
  6. Taste the broth and adjust seasoning with salt if necessary.
  7. Serve the soup hot, garnished with chopped green onions.
