Ingredients

  • all-purpose flour - 100 grams
  • water - 200 milliliters
  • kale, finely chopped - 50 grams
  • carrot, grated - 50 grams
  • green onion, chopped - 30 grams
  • aonori seaweed - 2 tablespoons
  • vegan mayonnaise - 2 tablespoons
  • soy sauce - 1 tablespoon
  • salt - 1/2 teaspoon
  • pepper - 1/4 teaspoon
  • vegetable oil - 2 tablespoons

Steps

  1. In a mixing bowl, combine the all-purpose flour, water, salt, and pepper, stirring until smooth.
  2. Add the chopped kale, grated carrot, green onion, and aonori seaweed to the batter and mix well.
  3. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
  4. Pour half of the batter into the skillet, spreading it evenly to form a pancake.
  5. Cook for about 5-7 minutes until the bottom is golden brown, then carefully flip and cook for an additional 5-7 minutes on the other side.
  6. Remove from the skillet and repeat the process with the remaining batter to make a second pancake.
  7. Serve the pancakes warm, drizzled with vegan mayonnaise and a splash of soy sauce.
