Ingredients

  • Agar-agar powder - 5 grams
  • Water - 250 ml
  • Sugar - 30 grams
  • Red bean paste (anko) - 100 grams
  • Fresh seasonal fruit (e.g., strawberries, kiwi, or melon) - 150 grams
  • Sweet syrup (e.g., black sugar syrup or honey) - 30 ml
  • Matcha powder (optional) - 1 teaspoon

Steps

  1. In a small saucepan, combine 250 ml of water and 5 grams of agar-agar powder. Stir well and let it soak for about 5 minutes.
  2. After soaking, bring the mixture to a boil over medium heat, stirring continuously. Once boiling, add 30 grams of sugar and continue stirring until completely dissolved.
  3. Remove the saucepan from heat and pour the mixture into a mold or shallow dish. Allow it to cool at room temperature for about 15 minutes, then refrigerate until set (about 30 minutes).
  4. While the agar jelly is setting, prepare your fresh fruit by washing and cutting it into bite-sized pieces.
  5. Once the agar jelly is set, cut it into cubes and place them in serving bowls.
  6. Add a generous spoonful of red bean paste on top of the agar cubes, then arrange the fresh fruit around the jelly.
  7. Drizzle with sweet syrup and, if desired, sprinkle a teaspoon of matcha powder over the dessert before serving.
