Ingredients
- Agar-agar powder - 1 teaspoon
- Water - 250 ml
- Coconut sugar - 2 tablespoons
- Fresh mango - 1/2 medium, diced
- Kiwi - 1 medium, diced
- Blueberries - 50 grams
- Chia seeds - 1 tablespoon
- Coconut milk - 100 ml
- Unsweetened shredded coconut - 2 tablespoons
Steps
- In a small saucepan, combine the water and agar-agar powder. Heat over medium heat, stirring until the agar-agar is completely dissolved.
- Once dissolved, bring the mixture to a gentle boil and then reduce the heat. Stir in the coconut sugar until fully dissolved.
- Remove the saucepan from heat and pour the mixture into a mold or small bowls. Let it cool at room temperature for about 10-15 minutes, then refrigerate for at least 15 minutes to set.
- While the agar is setting, prepare the fruit by dicing the mango and kiwi, and wash the blueberries. Set aside.
- In a small bowl, combine the chia seeds with coconut milk and let it sit for about 10 minutes to thicken.
- Once the agar has set, cut it into cubes and divide them between two serving bowls.
- Top each bowl with the diced mango, kiwi, and blueberries. Drizzle the chia seed coconut mixture on top and sprinkle with shredded coconut.
- Serve immediately and enjoy your Anmitsu Delight!
