- Agar-agar powder - 2 teaspoons
- Water - 300 ml
- Kuzu (or cornstarch) - 1 teaspoon
- Sweet red bean paste (anko) - 100 grams
- Seasonal fruits (like strawberries, kiwi, and mandarin oranges) - 200 grams total
- Maple syrup - 2 tablespoons
- Matcha powder (optional for garnish) - 1 teaspoon
Steps
- In a small saucepan, combine the agar-agar powder and water. Stir well and bring to a boil over medium heat.
- Once boiling, reduce the heat and simmer for 5 minutes, stirring continuously until the agar-agar is fully dissolved.
- Pour the mixture into a shallow dish and let it cool at room temperature until set, about 20 minutes.
- While the agar jelly is setting, prepare the seasonal fruits by washing and cutting them into bite-sized pieces.
- Once the agar jelly has set, cut it into cubes.
- In a small bowl, mix the kuzu (or cornstarch) with a tablespoon of cold water to create a slurry.
- In a small saucepan, combine the slurry with 100 ml of water and bring to a gentle simmer, stirring until it thickens slightly. Remove from heat.
- To serve, place a few cubes of agar jelly in a dessert bowl, add a dollop of sweet red bean paste, and top with a variety of seasonal fruits.
- Drizzle with maple syrup and, if desired, sprinkle with matcha powder for an extra touch.
