Amazake
Amazake is a traditional Japanese sweet drink made from fermented rice, naturally sweet and creamy, perfect for a healthy snack. This vegan version captures the essence of the original while offering a delightful taste experience.

Ingredients
- Cooked white rice - 150 grams
- Water - 300 milliliters
- Koji rice (Aspergillus oryzae) - 30 grams
- Maple syrup - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Cinnamon powder - 1/2 teaspoon (optional)
Steps
- In a blender, combine the cooked white rice and water, and blend until smooth.
- Transfer the rice mixture to a bowl and add the koji rice, mixing well to combine.
- Cover the bowl with a clean cloth and keep it in a warm place (around 30°C) for 8-12 hours to ferment.
- After fermentation, stir in the maple syrup, vanilla extract, and a pinch of salt until well combined.
- If desired, sprinkle with cinnamon powder before serving.
- Serve warm or chilled, and enjoy your homemade amazake!
