- Mirin - 2 tablespoons
- Green onions - 2 stalks, finely chopped
- Grated daikon radish - 50 grams (for garnish)
- Nori seaweed - 1 sheet, cut into strips (for garnish)
Steps
- Press the tofu for at least 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
- Coat each tofu cube with cornstarch, ensuring an even layer on all sides.
- Heat vegetable oil in a deep frying pan over medium-high heat. Once hot, carefully add the tofu cubes in batches, frying until golden brown and crispy, about 3-4 minutes per side.
- Remove the fried tofu and drain on paper towels to remove excess oil.
- In a separate pot, combine the vegan dashi broth, soy sauce, and mirin. Bring to a gentle simmer over medium heat.
- Once the broth is simmering, add the fried tofu cubes and let them warm in the broth for about 2 minutes.
- Ladle the soup into bowls, and top with chopped green onions, grated daikon radish, and nori strips.
