Ingredients
- Firm tofu - 200 grams
- Soy sauce - 30 ml
- Mirin - 15 ml
- Dashi (vegan) - 200 ml
- Cornstarch - 40 grams
- Vegetable oil - 50 ml (for frying)
- Soba noodles - 150 grams
- Green onions - 2 stalks (sliced)
- Nori seaweed - 1 sheet (cut into strips)
- Sesame seeds - 1 tablespoon
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
- In a bowl, mix the soy sauce, mirin, and vegan dashi to create the sauce.
- Coat each tofu cube in cornstarch evenly.
- Heat vegetable oil in a frying pan over medium heat and fry the tofu cubes until golden and crispy on all sides, about 6-8 minutes. Remove and drain on paper towels.
- Cook the soba noodles according to package instructions, then drain and rinse under cold water to stop the cooking process.
- In a large serving bowl, mix the cooked soba noodles with the prepared sauce.
- Top the noodles with the crispy agedashi tofu, sliced green onions, nori strips, and sesame seeds.
