Ingredients

  • Firm tofu - 200 grams
  • Soy sauce - 30 ml
  • Mirin - 15 ml
  • Dashi (vegan) - 200 ml
  • Cornstarch - 40 grams
  • Vegetable oil - 50 ml (for frying)
  • Soba noodles - 150 grams
  • Green onions - 2 stalks (sliced)
  • Nori seaweed - 1 sheet (cut into strips)
  • Sesame seeds - 1 tablespoon

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
  2. In a bowl, mix the soy sauce, mirin, and vegan dashi to create the sauce.
  3. Coat each tofu cube in cornstarch evenly.
  4. Heat vegetable oil in a frying pan over medium heat and fry the tofu cubes until golden and crispy on all sides, about 6-8 minutes. Remove and drain on paper towels.
  5. Cook the soba noodles according to package instructions, then drain and rinse under cold water to stop the cooking process.
  6. In a large serving bowl, mix the cooked soba noodles with the prepared sauce.
  7. Top the noodles with the crispy agedashi tofu, sliced green onions, nori strips, and sesame seeds.
