Ingredients

  • Adzuki beans - 100 grams
  • Water - 250 milliliters (for cooking beans)
  • Sugar - 30 grams
  • Rice flour - 50 grams
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Coconut milk - 50 milliliters
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Soak the adzuki beans in water for at least 4 hours or overnight.
  2. Drain the soaked beans and place them in a pot with 250 milliliters of fresh water. Bring to a boil, then reduce heat and simmer for about 30 minutes until tender.
  3. Once cooked, drain the beans and mash them in a bowl with a fork or a potato masher until smooth.
  4. In a separate bowl, mix the rice flour, baking powder, sugar, and salt until well combined.
  5. Add the mashed adzuki beans, coconut milk, and vanilla extract to the dry ingredients. Mix until a smooth batter forms.
  6. Preheat the oven to 180°C (350°F). Grease two small ramekins or a baking dish.
  7. Pour the batter into the prepared ramekins and smooth the top with a spatula.
  8. Bake in the preheated oven for 25-30 minutes or until the cake is set and a toothpick comes out clean.
  9. Allow the cakes to cool slightly before garnishing with sesame seeds and serving.
