- Coconut milk - 50 milliliters

Steps
- Soak the adzuki beans in water for at least 4 hours or overnight.
- Drain the soaked beans and place them in a pot with 250 milliliters of fresh water. Bring to a boil, then reduce heat and simmer for about 30 minutes until tender.
- Once cooked, drain the beans and mash them in a bowl with a fork or a potato masher until smooth.
- In a separate bowl, mix the rice flour, baking powder, sugar, and salt until well combined.
- Add the mashed adzuki beans, coconut milk, and vanilla extract to the dry ingredients. Mix until a smooth batter forms.
- Preheat the oven to 180°C (350°F). Grease two small ramekins or a baking dish.
- Pour the batter into the prepared ramekins and smooth the top with a spatula.
- Bake in the preheated oven for 25-30 minutes or until the cake is set and a toothpick comes out clean.
