- Erythritol - 30 grams
- Baking powder - 1 teaspoon
- Unsweetened cocoa powder - 15 grams
- Heavy cream - 200 milliliters
- Vanilla extract - 1 teaspoon
- Dark chocolate (85% cocoa) - 30 grams
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, whisk together the almond flour, erythritol, baking powder, cocoa powder, and a pinch of salt.
- In a separate bowl, beat the eggs until frothy, then combine with the dry ingredients until well mixed.
- Pour the batter into a greased 20 cm (8 inch) round cake pan and bake for 15-20 minutes, or until a toothpick comes out clean. Allow to cool completely.
- While the cake is cooling, prepare the custard by heating the heavy cream in a saucepan over medium heat until just simmering.
- Remove from heat and stir in vanilla extract and chopped dark chocolate until melted and smooth.
- Once the cake is cool, slice it into thin layers. In serving glasses or bowls, alternate layers of cake and chocolate custard.
