Ingredients

  • Almond flour - 50 grams
  • Eggs - 2 large
  • Erythritol - 30 grams
  • Baking powder - 1 teaspoon
  • Unsweetened cocoa powder - 15 grams
  • Heavy cream - 200 milliliters
  • Vanilla extract - 1 teaspoon
  • Dark chocolate (85% cocoa) - 30 grams
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, whisk together the almond flour, erythritol, baking powder, cocoa powder, and a pinch of salt.
  3. In a separate bowl, beat the eggs until frothy, then combine with the dry ingredients until well mixed.
  4. Pour the batter into a greased 20 cm (8 inch) round cake pan and bake for 15-20 minutes, or until a toothpick comes out clean. Allow to cool completely.
  5. While the cake is cooling, prepare the custard by heating the heavy cream in a saucepan over medium heat until just simmering.
  6. Remove from heat and stir in vanilla extract and chopped dark chocolate until melted and smooth.
  7. Once the cake is cool, slice it into thin layers. In serving glasses or bowls, alternate layers of cake and chocolate custard.
  8. Chill in the refrigerator for at least 1 hour before serving to allow flavors to meld.
