- Cherry tomatoes - 200 grams, halved
- Dry white wine - 100 ml
- Vegetable broth - 500 ml
- Fresh parsley - 2 tablespoons, chopped
- Red chili flakes - 1/2 teaspoon (optional)
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the clams under cold water to remove any sand or grit, then soak them in cold water for about 20 minutes.
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the halved cherry tomatoes to the pot and cook for 3-4 minutes until they begin to soften.
- Pour in the white wine and let it simmer for 2-3 minutes to reduce slightly.
- Add the vegetable broth to the pot and bring to a gentle boil.
- Drain the clams and add them to the pot. Cover and cook for about 5-7 minutes, or until the clams open up. Discard any that do not open.
- Stir in the chopped parsley, red chili flakes (if using), and season with salt and black pepper to taste.
- Serve the soup hot, garnished with additional parsley if desired.
