Ingredients

  • Fresh clams - 500 grams

  • Cherry tomatoes - 200 grams, halved
  • Dry white wine - 100 ml
  • Vegetable broth - 500 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Red chili flakes - 1/2 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the clams under cold water to remove any sand or grit, then soak them in cold water for about 20 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the halved cherry tomatoes to the pot and cook for 3-4 minutes until they begin to soften.
  4. Pour in the white wine and let it simmer for 2-3 minutes to reduce slightly.
  5. Add the vegetable broth to the pot and bring to a gentle boil.
  6. Drain the clams and add them to the pot. Cover and cook for about 5-7 minutes, or until the clams open up. Discard any that do not open.
  7. Stir in the chopped parsley, red chili flakes (if using), and season with salt and black pepper to taste.
  8. Serve the soup hot, garnished with additional parsley if desired.
