- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 500 ml
- Potato - 1 medium, peeled and diced
- Nutritional yeast - 2 tablespoons
- Dried basil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
- Add the minced garlic and sauté for an additional minute, until fragrant.
- Stir in the diced potato and vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes, or until the potato is tender.
- Add the fresh spinach, dried basil, nutritional yeast, salt, and pepper. Cook for another 5 minutes until the spinach is wilted.
- Remove from heat and stir in the lemon juice.
- Serve hot, garnished with fresh parsley.
