  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 ml
  • Potato - 1 medium, peeled and diced
  • Nutritional yeast - 2 tablespoons
  • Dried basil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
  2. Add the minced garlic and sauté for an additional minute, until fragrant.
  3. Stir in the diced potato and vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes, or until the potato is tender.
  4. Add the fresh spinach, dried basil, nutritional yeast, salt, and pepper. Cook for another 5 minutes until the spinach is wilted.
  5. Remove from heat and stir in the lemon juice.
  6. Serve hot, garnished with fresh parsley.
