  • Vegetable broth - 800 milliliters
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, sautéing until the vegetables are soft, about 5 minutes.
  2. Add the minced garlic and diced zucchini, cooking for an additional 2 minutes until fragrant.
  3. Stir in the Arborio rice, mixing well to coat the grains with the oil and vegetables. Cook for 1-2 minutes until the rice is slightly translucent.
  4. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 15-20 minutes, or until the rice is tender.
  5. Add the chopped spinach, parsley, lemon juice, salt, and black pepper to taste. Stir well and cook for another 2-3 minutes until the spinach is wilted.
