- Zucchini - 1 small, diced
- Spinach - 50 grams, chopped
- Vegetable broth - 800 milliliters
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, sautéing until the vegetables are soft, about 5 minutes.
- Add the minced garlic and diced zucchini, cooking for an additional 2 minutes until fragrant.
- Stir in the Arborio rice, mixing well to coat the grains with the oil and vegetables. Cook for 1-2 minutes until the rice is slightly translucent.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 15-20 minutes, or until the rice is tender.
- Add the chopped spinach, parsley, lemon juice, salt, and black pepper to taste. Stir well and cook for another 2-3 minutes until the spinach is wilted.
- Remove from heat, adjust seasoning if necessary, and serve hot.
