- Quinoa - 100 grams
- Vegetable broth - 500 milliliters
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Zucchini - 1 small, diced
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the quinoa under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until translucent.
- Add the minced garlic, diced carrot, and celery to the pot and cook for another 5 minutes, stirring occasionally.
- Stir in the diced zucchini and dried oregano, cooking for an additional 2 minutes.
- Pour in the vegetable broth and bring the mixture to a boil.
- Add the rinsed quinoa, salt, and black pepper. Reduce heat to low, cover, and let simmer for 15 minutes or until quinoa is cooked and has absorbed most of the broth.
- Remove from heat, stir in fresh parsley and lemon juice. Adjust seasoning if necessary.
- Serve hot, garnished with additional parsley if desired.
