Ingredients

  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Chicken broth (Halal) - 500ml
  • Olive oil - 1 tablespoon
  • Fresh thyme - 1 teaspoon, chopped
  • Bay leaf - 1
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese (optional) - for serving
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a medium pot over medium heat.
  2. Add chopped onion, diced carrot, and diced celery to the pot, and sauté for 5 minutes until softened.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Add the chicken breast to the pot and pour in the chicken broth.
  5. Add thyme, bay leaf, salt, and black pepper to the pot.
  6. Bring the soup to a boil, then reduce heat and let it simmer for 15 minutes.
  7. Remove the chicken breast, shred it with two forks, and return it to the pot.
  8. Simmer for another 5 minutes to allow flavors to meld.
  9. Serve hot, garnished with fresh parsley and grated Parmesan cheese if desired.
