- Chicken broth (Halal) - 500ml
- Olive oil - 1 tablespoon
- Fresh thyme - 1 teaspoon, chopped
- Bay leaf - 1
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese (optional) - for serving
- Fresh parsley - for garnish
Steps
- Heat olive oil in a medium pot over medium heat.
- Add chopped onion, diced carrot, and diced celery to the pot, and sauté for 5 minutes until softened.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add the chicken breast to the pot and pour in the chicken broth.
- Add thyme, bay leaf, salt, and black pepper to the pot.
- Bring the soup to a boil, then reduce heat and let it simmer for 15 minutes.
- Remove the chicken breast, shred it with two forks, and return it to the pot.
- Simmer for another 5 minutes to allow flavors to meld.
- Serve hot, garnished with fresh parsley and grated Parmesan cheese if desired.
