  • Cherry tomatoes - 200 grams, halved
  • Fish stock - 500 ml
  • White wine - 100 ml
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - 1/2 teaspoon (optional)
  • Fresh basil - a handful, chopped
  • Prawns - 150 grams, peeled and deveined
  • Mussels - 150 grams, cleaned
  • White fish fillet (like cod or haddock) - 150 grams, cut into chunks
  • Lemon - 1, juiced

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and diced onion, sauté until soft and translucent, about 3-4 minutes.
  2. Add the diced red bell pepper and halved cherry tomatoes to the pot, cooking for another 2-3 minutes until the tomatoes start to soften.
  3. Pour in the white wine and cook for 2 minutes, allowing the alcohol to evaporate.
  4. Add the fish stock to the pot and bring to a simmer. Season with salt, black pepper, and chili flakes if using.
  5. Once simmering, add the prawns, mussels, and white fish chunks. Cover the pot and cook for about 5-7 minutes, or until the mussels open and the fish is cooked through.
  6. Stir in the fresh basil and lemon juice. Taste and adjust seasoning if necessary.
  7. Serve hot, garnished with additional basil if desired.
