- Cherry tomatoes - 200 grams, halved
- Fish stock - 500 ml
- White wine - 100 ml
- Salt - to taste
- Black pepper - to taste
- Chili flakes - 1/2 teaspoon (optional)
- Fresh basil - a handful, chopped
- Prawns - 150 grams, peeled and deveined
- Mussels - 150 grams, cleaned
- White fish fillet (like cod or haddock) - 150 grams, cut into chunks
- Lemon - 1, juiced
Steps
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and diced onion, sauté until soft and translucent, about 3-4 minutes.
- Add the diced red bell pepper and halved cherry tomatoes to the pot, cooking for another 2-3 minutes until the tomatoes start to soften.
- Pour in the white wine and cook for 2 minutes, allowing the alcohol to evaporate.
- Add the fish stock to the pot and bring to a simmer. Season with salt, black pepper, and chili flakes if using.
- Once simmering, add the prawns, mussels, and white fish chunks. Cover the pot and cook for about 5-7 minutes, or until the mussels open and the fish is cooked through.
- Stir in the fresh basil and lemon juice. Taste and adjust seasoning if necessary.
- Serve hot, garnished with additional basil if desired.
