Ingredients

  • Potatoes - 300 grams, peeled and diced
  • Carrots - 100 grams, diced
  • Celery - 100 grams, diced
  • Onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional for cheesy flavor)

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
  2. Add the diced carrots and celery to the pot, cooking for an additional 5 minutes until slightly softened.
  3. Stir in the diced potatoes and fresh thyme, mixing well with the vegetables.
  4. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
  5. Using a potato masher or immersion blender, mash or blend the soup to your desired consistency, leaving some chunks for texture.
  6. Season with salt, black pepper, and nutritional yeast (if using) to taste. Serve hot, garnished with additional thyme if desired.
