  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the diced onion, carrot, and celery to the pot, and sauté for about 5-7 minutes until softened.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Add the rinsed lentils, vegetable broth, bay leaf, and thyme to the pot. Bring to a boil.
  6. Once boiling, reduce the heat to low and simmer for 25-30 minutes, or until the lentils are tender.
  7. Season with salt and black pepper to taste, and remove the bay leaf before serving.
