- Bay leaf - 1
- Thyme - 1 teaspoon, dried

- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, carrot, and celery to the pot, and sauté for about 5-7 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the rinsed lentils, vegetable broth, bay leaf, and thyme to the pot. Bring to a boil.
- Once boiling, reduce the heat to low and simmer for 25-30 minutes, or until the lentils are tender.
- Season with salt and black pepper to taste, and remove the bay leaf before serving.
