- Vegetable broth - 500 ml
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Chili flakes - a pinch (optional)
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
- Stir in the diced carrot and celery, cooking for another 5 minutes until softened.
- Pour in the tomato passata and vegetable broth, bringing the mixture to a gentle simmer.
- Add the shrimp and cook for about 5-7 minutes, or until the shrimp are pink and cooked through.
- Stir in the lemon juice, chopped parsley, and season with salt, black pepper, and chili flakes if desired.
- Remove from heat and let it sit for a couple of minutes to allow the flavors to meld.
- Serve hot, garnished with extra parsley if desired.
