  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - a pinch (optional)

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
  3. Stir in the diced carrot and celery, cooking for another 5 minutes until softened.
  4. Pour in the tomato passata and vegetable broth, bringing the mixture to a gentle simmer.
  5. Add the shrimp and cook for about 5-7 minutes, or until the shrimp are pink and cooked through.
  6. Stir in the lemon juice, chopped parsley, and season with salt, black pepper, and chili flakes if desired.
  7. Remove from heat and let it sit for a couple of minutes to allow the flavors to meld.
  8. Serve hot, garnished with extra parsley if desired.
