- Garlic - 1 clove, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Potato - 1 medium, peeled and diced
- Vegetable broth - 500 ml
- Fresh basil - 5 leaves, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a pot over medium heat. Add the chopped shallot and garlic, sautéing until translucent, about 2-3 minutes.
- Add the diced carrot, celery, and potato to the pot, stirring occasionally for another 5 minutes until the vegetables start to soften.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 15 minutes, or until the potatoes are tender.
- While the soup is simmering, gently rinse the zucchini blossoms and remove the stamens. Cut them into strips.
- Once the potatoes are tender, add the zucchini blossoms and chopped basil to the pot. Season with salt and pepper, and simmer for an additional 5 minutes.
- Remove from heat, stir in the lemon juice, and adjust seasoning if necessary. Serve hot.
