- Dried fava beans - 150 grams
- Extra virgin olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 750 milliliters
- Bay leaf - 1
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Rinse the dried fava beans under cold water and soak them in water for at least 4 hours or overnight.
- Drain the soaked fava beans and set aside.
- In a large pot, heat the olive oil over medium heat and add the diced onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the soaked fava beans, vegetable broth, and bay leaf. Bring to a boil, then reduce the heat and let it simmer for 30-35 minutes until the beans are tender.
- Remove the bay leaf, and using an immersion blender, blend the soup to your desired consistency (smooth or chunky).
- Season with salt, black pepper, and stir in the chopped parsley and lemon juice just before serving.
