- Garlic - 2 cloves, minced
- Zucchini - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 750 milliliters
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the spelt (farro) under cold water and drain.
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until softened.
- Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
- Stir in the diced zucchini and tomato, cooking for another 3-4 minutes until the vegetables are slightly tender.
- Add the rinsed spelt, vegetable broth, bay leaf, thyme, salt, and black pepper to the pot. Bring the mixture to a boil.
- Reduce the heat to low, cover, and let it simmer for about 30 minutes, or until the spelt is tender, stirring occasionally.
- Remove the bay leaf and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
