  • Spelt (farro) - 100 grams
  • Olive oil - 2 tablespoons
  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Zucchini - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 750 milliliters
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the spelt (farro) under cold water and drain.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until softened.
  3. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Stir in the diced zucchini and tomato, cooking for another 3-4 minutes until the vegetables are slightly tender.
  5. Add the rinsed spelt, vegetable broth, bay leaf, thyme, salt, and black pepper to the pot. Bring the mixture to a boil.
  6. Reduce the heat to low, cover, and let it simmer for about 30 minutes, or until the spelt is tender, stirring occasionally.
  7. Remove the bay leaf and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh parsley.
