  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Vegetable broth - 500 milliliters
  • Tomato paste - 1 tablespoon
  • Fresh basil - 5 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon (optional)

Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Stir in the minced garlic and diced carrot; cook for another 2 minutes.
  4. Add the diced potato and continue stirring for 2 minutes.
  5. Pour in the vegetable broth and bring to a boil.
