- Bay leaf - 1
- Vegetable broth - 750 ml
- Salt - to taste
- Black pepper - to taste
- Baguette - 2 slices (optional, for serving)
- Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)
Steps
- Peel and thinly slice the yellow onions.
- In a large pot, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt, and sauté for about 15-20 minutes, stirring occasionally, until the onions are caramelized and golden brown.
- Add the minced garlic, chopped thyme, and bay leaf to the pot. Cook for an additional 2-3 minutes until fragrant.
- Pour in the vegetable broth and bring the mixture to a simmer. Reduce the heat to low and let it simmer for about 20 minutes. Season with salt and black pepper to taste.
- While the soup is simmering, if using, toast the baguette slices until golden brown.
- Once the soup is ready, remove the bay leaf. Serve hot, garnished with nutritional yeast if desired, alongside the toasted baguette slices.
