  • Vegetable broth - 750 ml

  • Baguette - 2 slices (optional, for serving)
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)

Steps

  1. Peel and thinly slice the yellow onions.
  2. In a large pot, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt, and sauté for about 15-20 minutes, stirring occasionally, until the onions are caramelized and golden brown.
  3. Add the minced garlic, chopped thyme, and bay leaf to the pot. Cook for an additional 2-3 minutes until fragrant.
