Ingredients

  • Carrots - 300 grams
  • Onion - 100 grams
  • Garlic - 2 cloves
  • Celery - 50 grams
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Thyme - 1 teaspoon (dried)
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Peel and chop the carrots into small pieces.
  2. Finely chop the onion, garlic, and celery.
  3. In a pot, heat the olive oil over medium heat and add the chopped onion, garlic, and celery. Sauté until the onion becomes translucent, about 5 minutes.
  4. Add the chopped carrots to the pot and stir for another 5 minutes.
  5. Pour in the vegetable broth and add the thyme, bay leaf, salt, and black pepper. Bring to a boil.
  6. Reduce the heat and let the soup simmer for about 15 minutes, or until the carrots are tender.
  7. Remove the bay leaf and use an immersion blender to puree the soup until smooth. You can also transfer it to a blender in batches if needed.
  8. Stir in the lemon juice and adjust seasoning with salt and pepper if necessary.
  9. Serve hot, garnished with fresh parsley.
