- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 20 grams, grated (optional for serving)
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped shallot and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for an additional minute, being careful not to burn it.
- Add the quartered artichokes to the pot and stir to combine, cooking for about 5 minutes until they start to soften.
- Pour in the vegetable broth and bring to a gentle simmer. Cook for about 15 minutes until the artichokes are tender.
- Use an immersion blender to puree the soup to your desired consistency, or transfer to a blender in batches if you don't have an immersion blender.
- Stir in the lemon juice and chopped parsley, and season with salt and black pepper to taste. Heat through for another 2-3 minutes.
- Serve hot, garnished with grated Parmesan cheese if desired.
