Ingredients

  • Shallot - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 20 grams, grated (optional for serving)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped shallot and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for an additional minute, being careful not to burn it.
  3. Add the quartered artichokes to the pot and stir to combine, cooking for about 5 minutes until they start to soften.
  4. Pour in the vegetable broth and bring to a gentle simmer. Cook for about 15 minutes until the artichokes are tender.
  5. Use an immersion blender to puree the soup to your desired consistency, or transfer to a blender in batches if you don't have an immersion blender.
  6. Stir in the lemon juice and chopped parsley, and season with salt and black pepper to taste. Heat through for another 2-3 minutes.
  7. Serve hot, garnished with grated Parmesan cheese if desired.
