  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 milliliters
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until they soften.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the chopped broccoli to the pot and stir well, cooking for another 3 minutes.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes, or until the broccoli is tender.
  5. Remove the pot from heat and use an immersion blender to puree the soup until smooth, or carefully transfer it to a blender in batches.
  6. Stir in the nutritional yeast, lemon juice, salt, and black pepper. Adjust seasoning to taste.
  7. Serve hot, garnished with fresh parsley.
