- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 500 milliliters
- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until they soften.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chopped broccoli to the pot and stir well, cooking for another 3 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes, or until the broccoli is tender.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth, or carefully transfer it to a blender in batches.
- Stir in the nutritional yeast, lemon juice, salt, and black pepper. Adjust seasoning to taste.
