  • Zucchini - 2 medium-sized
  • Fresh clams - 250 grams, cleaned

  • White wine - 100 ml
  • Red pepper flakes - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Using a spiralizer, create zucchini noodles from the two medium zucchinis and set aside.
  2. In a large skillet, heat the olive oil over medium heat, then add the minced garlic and red pepper flakes. Sauté until the garlic is fragrant, about 1-2 minutes.
  3. Add the cleaned clams to the skillet and pour in the white wine. Cover the skillet and let the clams steam until they open, about 5-7 minutes.
  4. Once the clams have opened, remove the lid and add the spiralized zucchini noodles to the skillet. Toss gently to combine and cook for an additional 2-3 minutes until the zucchini is just tender.
  5. Stir in the chopped parsley, lemon juice, salt, and pepper to taste. Mix well to incorporate all the flavors.
