Ingredients
- Zucchini - 2 medium-sized
- Fresh clams - 250 grams, cleaned
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- White wine - 100 ml
- Red pepper flakes - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
- Salt - to taste
- Black pepper - to taste
Steps
- Using a spiralizer, create zucchini noodles from the two medium zucchinis and set aside.
- In a large skillet, heat the olive oil over medium heat, then add the minced garlic and red pepper flakes. Sauté until the garlic is fragrant, about 1-2 minutes.
- Add the cleaned clams to the skillet and pour in the white wine. Cover the skillet and let the clams steam until they open, about 5-7 minutes.
- Once the clams have opened, remove the lid and add the spiralized zucchini noodles to the skillet. Toss gently to combine and cook for an additional 2-3 minutes until the zucchini is just tender.
- Stir in the chopped parsley, lemon juice, salt, and pepper to taste. Mix well to incorporate all the flavors.
- Serve immediately, garnished with extra parsley if desired.
