- Zucchini - 2 medium
- Ricotta cheese - 250 grams
- Fresh spinach - 100 grams
- Mozzarella cheese - 100 grams, shredded
- Parmesan cheese - 50 grams, grated
- Egg - 1 large
- Marinara sauce - 200 ml
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Italian seasoning - 1 teaspoon
Steps
- Preheat the oven to 190°C (375°F).
- Wash and slice the zucchini lengthwise into thin strips using a mandoline or sharp knife.
- Sprinkle a little salt on the zucchini slices and let them sit for about 10 minutes to release excess moisture.
- In a skillet, heat olive oil over medium heat, then add minced garlic and sauté until fragrant, about 1 minute.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine ricotta cheese, cooked spinach, egg, salt, black pepper, and Italian seasoning. Mix well.
- Pat the zucchini slices dry with a paper towel to remove excess moisture.
- Spread a thin layer of marinara sauce at the bottom of a baking dish.
- Take a zucchini slice, place a spoonful of the ricotta-spinach mixture at one end, and roll it up tightly. Place the roll seam-side down in the baking dish. Repeat with remaining zucchini slices.
- Once all rolls are in the dish, pour the remaining marinara sauce over the top and sprinkle with shredded mozzarella and grated Parmesan cheese.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
