Ingredients
- 2 medium zucchini
- 200 grams ricotta cheese
- 100 grams fresh spinach, chopped
- 50 grams grated Parmesan cheese
- 100 grams shredded mozzarella cheese
- 1 cup marinara sauce
- 1 egg
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil for drizzling
Steps
- Preheat the oven to 190°C (375°F).
- Slice the zucchini lengthwise into thin strips using a vegetable peeler or mandoline.
- Sprinkle the zucchini slices with salt and let them sit for 10 minutes to draw out excess moisture.
- In a mixing bowl, combine the ricotta cheese, chopped spinach, Parmesan cheese, egg, oregano, garlic powder, salt, and pepper. Mix until well blended.
- Rinse the zucchini strips under cold water to remove excess salt and pat them dry with paper towels.
- Spread a thin layer of the ricotta mixture on each zucchini slice, then roll them up tightly.
- In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the zucchini roll-ups seam-side down in the dish.
- Pour the remaining marinara sauce over the roll-ups and sprinkle with shredded mozzarella cheese.
- Drizzle with a little olive oil and cover the dish with aluminum foil.
- Bake in the preheated oven for 25 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Remove from the oven and let it cool for a few minutes before serving.
