Ingredients

  • 2 medium zucchini
  • 200 grams ricotta cheese
  • 100 grams fresh spinach, chopped
  • 50 grams grated Parmesan cheese
  • 100 grams shredded mozzarella cheese
  • 1 cup marinara sauce
  • 1 egg
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for drizzling

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Slice the zucchini lengthwise into thin strips using a vegetable peeler or mandoline.
  3. Sprinkle the zucchini slices with salt and let them sit for 10 minutes to draw out excess moisture.
  4. In a mixing bowl, combine the ricotta cheese, chopped spinach, Parmesan cheese, egg, oregano, garlic powder, salt, and pepper. Mix until well blended.
  5. Rinse the zucchini strips under cold water to remove excess salt and pat them dry with paper towels.
  6. Spread a thin layer of the ricotta mixture on each zucchini slice, then roll them up tightly.
  7. In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the zucchini roll-ups seam-side down in the dish.
  8. Pour the remaining marinara sauce over the roll-ups and sprinkle with shredded mozzarella cheese.
  9. Drizzle with a little olive oil and cover the dish with aluminum foil.
  10. Bake in the preheated oven for 25 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  11. Remove from the oven and let it cool for a few minutes before serving.
