Ingredients

  • Zucchini - 2 medium
  • Ricotta cheese - 200 grams
  • Mozzarella cheese, shredded - 150 grams
  • Parmesan cheese, grated - 50 grams
  • Marinara sauce - 200 grams
  • Egg - 1 large
  • Garlic, minced - 2 cloves
  • Olive oil - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil, chopped - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the zucchini lengthwise into thin strips (about 0.5 cm thick) using a mandoline or sharp knife.
  3. Sprinkle the zucchini slices with salt and let them sit for 15 minutes to release excess moisture.
  4. In a skillet, heat olive oil over medium heat, add minced garlic, and sauté for 1 minute until fragrant.
  5. In a bowl, combine ricotta cheese, egg, dried oregano, salt, and black pepper.
  6. Pat the zucchini slices dry with paper towels to remove excess moisture.
  7. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  8. Layer zucchini slices over the sauce, followed by half of the ricotta mixture, then a layer of marinara sauce, and a sprinkle of mozzarella cheese.
  9. Repeat the layering process until all ingredients are used, finishing with marinara sauce and a generous topping of mozzarella and grated Parmesan cheese.
  10. Cover the baking dish with aluminum foil and bake for 25 minutes.
  11. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  12. Let the lasagna cool for 5 minutes before slicing. Garnish with fresh basil before serving.
