- Zucchini - 300 grams, grated

- All-purpose flour - 50 grams
- Egg - 1 large
- Parmesan cheese - 30 grams, grated
- Garlic powder - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Burger buns - 2, preferably whole grain
- Lettuce - 2 leaves
- Tomato - 1 medium, sliced
- Tzatziki sauce - 4 tablespoons (optional)
Steps
- Place the grated zucchini in a bowl and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture.
- After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove as much moisture as possible.
- In a mixing bowl, combine the drained zucchini, all-purpose flour, egg, Parmesan cheese, garlic powder, and black pepper. Mix until well combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Scoop about 1/4 cup of the zucchini mixture into the skillet and flatten it slightly to form a fritter. Repeat for the second fritter.
- Cook the fritters for about 3-4 minutes on each side until golden brown and crispy. Add more oil if necessary for cooking the second side.
- Once cooked, remove the fritters from the skillet and place them on paper towels to drain excess oil.
- To assemble the burgers, place a lettuce leaf on the bottom half of each burger bun, followed by a zucchini fritter, a slice of tomato, and a dollop of tzatziki sauce if using.
- Top with the other half of the bun and serve immediately.
