Ingredients

  • Zucchini - 300 grams, grated
  • Salt - 1 teaspoon
  • All-purpose flour - 50 grams
  • Egg - 1 large
  • Parmesan cheese - 30 grams, grated
  • Garlic powder - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Burger buns - 2, preferably whole grain
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Tzatziki sauce - 4 tablespoons (optional)

Steps

  1. Place the grated zucchini in a bowl and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture.
  2. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove as much moisture as possible.
  3. In a mixing bowl, combine the drained zucchini, all-purpose flour, egg, Parmesan cheese, garlic powder, and black pepper. Mix until well combined.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Scoop about 1/4 cup of the zucchini mixture into the skillet and flatten it slightly to form a fritter. Repeat for the second fritter.
  5. Cook the fritters for about 3-4 minutes on each side until golden brown and crispy. Add more oil if necessary for cooking the second side.
  6. Once cooked, remove the fritters from the skillet and place them on paper towels to drain excess oil.
  7. To assemble the burgers, place a lettuce leaf on the bottom half of each burger bun, followed by a zucchini fritter, a slice of tomato, and a dollop of tzatziki sauce if using.
  8. Top with the other half of the bun and serve immediately.
