- Zucchini - 300 grams

- Chickpea flour - 40 grams
- Nutritional yeast - 2 tablespoons
- Garlic powder - 1 teaspoon
- Fresh basil - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 4 tablespoons (for frying)
- Lemon juice - 1 tablespoon
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture to prevent the fritters from being soggy.
- In a mixing bowl, combine the grated zucchini, all-purpose flour, chickpea flour, nutritional yeast, garlic powder, chopped basil, chopped parsley, salt, and black pepper. Mix well until all ingredients are fully incorporated.
- Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat.
- Scoop about 2 tablespoons of the zucchini mixture into the skillet for each fritter, flattening them slightly with the back of the spoon. Cook for about 3-4 minutes on each side or until golden brown and crispy.
- Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb excess oil. Repeat with the remaining mixture, adding more oil as needed.
- Drizzle the lemon juice over the fritters before serving.
