Ingredients

  • Zucchini - 200 grams, grated
  • Eggs - 4 large
  • Parmesan cheese - 30 grams, grated
  • Olive oil - 2 tablespoons
  • Fresh basil - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the grated zucchini to the skillet, sprinkle with salt and pepper, and cook for about 5-7 minutes until the zucchini is tender and any excess moisture has evaporated.
  4. In a bowl, whisk together the eggs, grated Parmesan cheese, and chopped basil until well combined.
  5. Pour the egg mixture over the sautéed zucchini in the skillet, ensuring even distribution.
  6. Cook on the stovetop for about 3-4 minutes, gently lifting the edges with a spatula to allow uncooked egg to flow underneath.
  7. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the frittata is set and lightly golden on top.
  8. Remove from the oven, let cool for a couple of minutes, then slice and serve warm.
