  • 2 medium zucchinis
  • 100g ground turkey
  • 50g ricotta cheese
  • 30g grated Parmesan cheese

  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large egg
  • Fresh basil leaves for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the zucchinis in half lengthwise and scoop out the insides using a spoon, creating boats for the filling.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  4. Add the ground turkey to the skillet and cook until browned. Stir in the scooped out zucchini flesh, oregano, salt, and pepper, cooking for an additional 3-4 minutes.
  5. In a bowl, combine the cooked turkey mixture with ricotta cheese, Parmesan cheese, and the egg. Mix until well combined.
  6. Fill each zucchini half with the turkey and cheese mixture, pressing down slightly to pack it in.
  7. Place the stuffed zucchinis on a baking dish and drizzle with the remaining olive oil.
  8. Bake in the preheated oven for about 20 minutes, or until the zucchinis are tender and the tops are golden.
  9. Remove from the oven and let cool slightly. Garnish with fresh basil leaves before serving.
