- 2 medium zucchinis
- 100g ground turkey

- 2 tablespoons olive oil
- 1 large egg

Steps
- Preheat the oven to 180°C (350°F).
- Cut the zucchinis in half lengthwise and scoop out the insides using a spoon, creating boats for the filling.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the ground turkey to the skillet and cook until browned. Stir in the scooped out zucchini flesh, oregano, salt, and pepper, cooking for an additional 3-4 minutes.
- In a bowl, combine the cooked turkey mixture with ricotta cheese, Parmesan cheese, and the egg. Mix until well combined.
- Fill each zucchini half with the turkey and cheese mixture, pressing down slightly to pack it in.
- Place the stuffed zucchinis on a baking dish and drizzle with the remaining olive oil.
- Bake in the preheated oven for about 20 minutes, or until the zucchinis are tender and the tops are golden.
- Remove from the oven and let cool slightly. Garnish with fresh basil leaves before serving.
