Ingredients

  • Zucchini - 2 medium (approximately 300g)
  • Extra virgin olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh basil - 1 tablespoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Wash and slice the zucchini into 1/2 cm thick rounds.
  2. In a mixing bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, black pepper, and red pepper flakes (if using).
  3. Add the zucchini slices to the bowl and toss until well coated in the marinade.
  4. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 15 minutes (or up to 2 hours for more flavor).
  5. Preheat the BBQ grill to medium heat.
  6. Remove the zucchini from the marinade and place the slices directly on the grill.
  7. Grill the zucchini for about 3-4 minutes on each side until they are tender and have grill marks.
  8. Once grilled, remove the zucchini from the grill and sprinkle with fresh basil and parsley before serving.
