- Zucchini - 2 medium (approximately 300g)
- Extra virgin olive oil - 2 tablespoons
- Balsamic vinegar - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh basil - 1 tablespoon, chopped
- Fresh parsley - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Wash and slice the zucchini into 1/2 cm thick rounds.
- In a mixing bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, black pepper, and red pepper flakes (if using).
- Add the zucchini slices to the bowl and toss until well coated in the marinade.
- Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 15 minutes (or up to 2 hours for more flavor).
- Preheat the BBQ grill to medium heat.
- Remove the zucchini from the marinade and place the slices directly on the grill.
- Grill the zucchini for about 3-4 minutes on each side until they are tender and have grill marks.
- Once grilled, remove the zucchini from the grill and sprinkle with fresh basil and parsley before serving.
