Steps
- Spiralize the zucchini using a spiralizer or a vegetable peeler to create zoodles.
- Heat olive oil in a medium saucepan over medium heat, then add minced garlic and sauté for 1 minute until fragrant.
- Add the crushed tomatoes, oregano, salt, and pepper to the saucepan. Stir well and let the sauce simmer for about 15 minutes.
- While the sauce is simmering, in a separate pan, lightly sauté the zoodles in a bit of olive oil for 3-4 minutes until tender but still al dente.
