Ingredients

  • Zucchini - 2 medium (about 400g)
  • Olive oil - 2 tablespoons (30ml)
  • Garlic - 3 cloves, minced
  • Canned crushed tomatoes - 400g
  • Anchovy fillets - 4 pieces, chopped
  • Kalamata olives - 100g, pitted and sliced
  • Capers - 2 tablespoons (30g), rinsed
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Fresh basil - 1/4 cup, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - for serving (optional)

Steps

  1. Spiralize the zucchini using a spiralizer or a julienne peeler to create zoodles. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the chopped anchovies and cook for another minute, allowing them to dissolve into the oil.
  4. Pour in the crushed tomatoes and stir to combine. Bring the sauce to a simmer and let it cook for 10 minutes.
  5. Stir in the sliced olives, capers, and red pepper flakes (if using). Season with salt and black pepper to taste. Let the sauce simmer for an additional 5 minutes.
  6. In the last 5 minutes of cooking, add the zoodles to the skillet, tossing them in the sauce until they are just tender.
  7. Remove from heat and stir in the fresh basil before serving.
  8. Serve hot with grated Parmesan cheese on top, if desired.
