- Zucchini - 2 medium (about 400g)
- Olive oil - 2 tablespoons (30ml)
- Garlic - 3 cloves, minced
- Canned crushed tomatoes - 400g
- Anchovy fillets - 4 pieces, chopped
- Kalamata olives - 100g, pitted and sliced
- Capers - 2 tablespoons (30g), rinsed
- Red pepper flakes - 1/4 teaspoon (optional)
- Fresh basil - 1/4 cup, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - for serving (optional)
Steps
- Spiralize the zucchini using a spiralizer or a julienne peeler to create zoodles. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the chopped anchovies and cook for another minute, allowing them to dissolve into the oil.
- Pour in the crushed tomatoes and stir to combine. Bring the sauce to a simmer and let it cook for 10 minutes.
- Stir in the sliced olives, capers, and red pepper flakes (if using). Season with salt and black pepper to taste. Let the sauce simmer for an additional 5 minutes.
- In the last 5 minutes of cooking, add the zoodles to the skillet, tossing them in the sauce until they are just tender.
- Remove from heat and stir in the fresh basil before serving.
- Serve hot with grated Parmesan cheese on top, if desired.
