Ingredients

  • Zucchini - 2 medium (about 300g)

  • Pine nuts - 30g (about 1/4 cup)
  • Garlic - 1 clove
  • Parmesan cheese - 30g (about 1/4 cup, grated)
  • Olive oil - 60ml (about 1/4 cup)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the zucchini using a spiralizer or a julienne peeler to create zoodles. Set aside.
  2. In a food processor, combine basil leaves, pine nuts, garlic, and Parmesan cheese. Pulse until finely chopped.
  3. With the food processor running, slowly drizzle in the olive oil until the mixture is smooth and well combined. Season with salt and black pepper to taste.
  4. In a large skillet over medium heat, add the zoodles and sauté for 2-3 minutes until slightly softened.
  5. Remove the skillet from heat and add the prepared pesto to the zoodles, tossing to coat evenly.
  6. Serve immediately, garnished with additional grated Parmesan and pine nuts if desired.
