- Pine nuts - 30g (about 1/4 cup)
- Garlic - 1 clove
- Parmesan cheese - 30g (about 1/4 cup, grated)
- Olive oil - 60ml (about 1/4 cup)
- Salt - to taste
- Black pepper - to taste
Steps
- Spiralize the zucchini using a spiralizer or a julienne peeler to create zoodles. Set aside.
- In a food processor, combine basil leaves, pine nuts, garlic, and Parmesan cheese. Pulse until finely chopped.
- With the food processor running, slowly drizzle in the olive oil until the mixture is smooth and well combined. Season with salt and black pepper to taste.
- In a large skillet over medium heat, add the zoodles and sauté for 2-3 minutes until slightly softened.
- Remove the skillet from heat and add the prepared pesto to the zoodles, tossing to coat evenly.
