Ingredients

  • Zucchini - 2 medium (approx. 400g)
  • Ground beef - 200g
  • Onion - 1 small (approx. 70g), finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 small (approx. 50g), finely diced
  • Canned diced tomatoes - 400g
  • Tomato paste - 2 tablespoons (30g)
  • Olive oil - 1 tablespoon (15ml)
  • Dried oregano - 1 teaspoon (1g)
  • Dried basil - 1 teaspoon (1g)
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - for serving (optional)

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create zoodles. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic and diced carrot to the skillet. Stir and cook for another 2-3 minutes until the carrot starts to soften.
  4. Increase the heat to medium-high and add the ground beef, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  5. Stir in the canned diced tomatoes, tomato paste, oregano, basil, salt, and pepper. Bring the mixture to a simmer and reduce heat to low. Let it cook for 10-15 minutes, stirring occasionally.
  6. While the sauce simmers, in a separate pot, lightly steam the zucchini noodles for about 2-3 minutes until just tender.
  7. To serve, place the zoodles on plates, top with the Bolognese sauce, and sprinkle with Parmesan cheese if desired.
