Ingredients

  • water - 120 ml
  • unsalted butter - 50 g
  • all-purpose flour - 70 g
  • eggs - 2 large
  • sugar - 30 g
  • vanilla extract - 1 tsp
  • salt - 1/4 tsp
  • vegetable oil - for frying
  • powdered sugar - for dusting
  • pastry cream - 150 g

Steps

  1. In a saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
  2. Once boiling, remove from heat and add flour all at once, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan.
  3. Allow the dough to cool slightly, then add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
  4. Heat vegetable oil in a deep frying pan to 180°C (350°F).
  5. Using a spoon or piping bag, drop small balls of dough into the hot oil, frying in batches until golden brown, about 3-4 minutes per side.
  6. Remove zeppole and place them on paper towels to drain excess oil.
  7. Once cooled, fill each zeppola with pastry cream using a piping bag.
  8. Dust with powdered sugar before serving.
