- water - 120 ml
- unsalted butter - 50 g
- all-purpose flour - 70 g
- eggs - 2 large
- sugar - 30 g
- vanilla extract - 1 tsp
- salt - 1/4 tsp
- vegetable oil - for frying
- powdered sugar - for dusting
- pastry cream - 150 g
Steps
- In a saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
- Once boiling, remove from heat and add flour all at once, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan.
- Allow the dough to cool slightly, then add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
- Heat vegetable oil in a deep frying pan to 180°C (350°F).
- Using a spoon or piping bag, drop small balls of dough into the hot oil, frying in batches until golden brown, about 3-4 minutes per side.
- Remove zeppole and place them on paper towels to drain excess oil.
- Once cooled, fill each zeppola with pastry cream using a piping bag.
- Dust with powdered sugar before serving.
