- Coconut milk (full-fat) - 50 ml
- Cocoa powder (optional) - 1 teaspoon
- Fresh berries (for garnish) - 50 grams
Steps
- In a medium mixing bowl, whisk the aquafaba vigorously using an electric mixer until it forms soft peaks, about 5-7 minutes.
- Gradually add the maple syrup and vanilla extract to the whipped aquafaba while continuing to whisk until the mixture is glossy and holds stiff peaks.
- In a small saucepan over low heat, combine the cornstarch and coconut milk, stirring constantly until the mixture thickens, approximately 3-4 minutes.
- Carefully fold the thickened coconut milk mixture into the whipped aquafaba until fully combined.
- If desired, fold in cocoa powder for a chocolate variation.
- Divide the zabaglione into two serving glasses and chill in the refrigerator for at least 30 minutes.
- Serve chilled, garnished with fresh berries.
