- Marsala wine - 2 tablespoons (30 ml)
- Vanilla extract - 1 teaspoon (5 ml)
- Fresh berries (strawberries, raspberries, or blueberries) - 100 grams
Steps
- In a medium heatproof bowl, whisk together the egg yolks, honey, Marsala wine, and vanilla extract until well combined.
- Place the bowl over a pot of simmering water (double boiler) and continue to whisk the mixture constantly until it thickens and becomes creamy, about 8-10 minutes.
- Remove the bowl from the heat and let it cool slightly.
- In a separate clean bowl, whip the egg whites until soft peaks form.
- Gently fold the whipped egg whites into the cooled zabaglione mixture until well combined, being careful not to deflate the whites.
- Divide the zabaglione into serving glasses and top with fresh berries.
- Serve immediately or chill in the refrigerator for up to 30 minutes before serving.
