Steps

  1. In a heatproof bowl, whisk together the egg yolks and sugar until the mixture is pale and fluffy.
  2. Add the Marsala wine and vanilla extract to the egg mixture, continuing to whisk until well combined.
  3. Place the bowl over a pot of simmering water (double boiler) and whisk continuously for about 8-10 minutes, until the mixture thickens and forms a creamy consistency.
  4. Remove the bowl from heat and let it cool slightly.
  5. While the zabaglione is cooling, prepare the mixed fresh fruit by washing and chopping them into bite-sized pieces.
  6. Divide the fruit evenly between two serving bowls, then spoon the warm zabaglione over the fruit.
  7. Garnish with mint leaves and serve immediately.
